Fresh Lime Gimlet

There are few cocktails as effortlessly cool as a gimlet. It’s sharp, refreshing, and knows exactly what it’s doing. With just three ingredients — gin, fresh lime juice, and simple syrup — it’s a no-fuss classic that delivers maximum flavor with minimal effort.
This version ditches the bottled stuff and leans into fresh lime juice for that bright, zesty kick. It’s the kind of drink that makes you feel like you’re on a rooftop somewhere — even if you’re just in your kitchen, dodging laundry. Shake it cold, pour it crisp, top it with a lime and a fresh lavender sprig, and sip like you’ve got the weekend off.

🍸 Ingredients:
2 oz gin (London Dry or a botanical-forward gin like Tanqueray, Beefeater, Empress, or Bombay Sapphire)
¾ oz fresh lime juice (freshly squeezed — this matters!)
¾ oz simple syrup (1:1 ratio — equal parts sugar and water, cooled)
Ice
Lime wheel or peel AND 1 sprig of fresh lavender for garnish
Directions:
Add the gin, lime juice, and simple syrup to a cocktail shaker.
Fill with ice and shake until very cold (about 15 seconds).
Strain into a chilled coupe or Nick & Nora glass.
Garnish with a lime wheel or peel AND a fresh lavendar sprig.
Optional Variations:
Like it more tart? Use 1 oz lime juice and ½ oz syrup.
Want to go old-school? Use Rose’s Lime Cordial instead of lime juice + syrup (1 oz).
Try a herbal twist: add a few basil or rosemary leaves before shaking.
Make it vodka-based for a cleaner, less botanical drink.
Pro Tip:
Always use fresh lime juice — bottled juice or cordial just won’t give you that bright, crisp zing that makes a gimlet so refreshing.
