Fresh, Bold, & Healthy Salsa

Inspired by my years in Crested Butte, Colorado, this salsa is a celebration of fresh, peak-season produce! There’s no better place to find it than your local farmer’s market. Juicy tomatoes, crisp onions, spicy jalapeños, and fragrant herbs all come together in a bold, hearty blend that’ bold, vibrant, healthy and made for sharing!
This recipe is perfect for summer cookouts, game day spreads, or just keeping in the fridge for an anytime snack. Let it chill for at least an hour (or overnight, if you can wait) to let the flavors really come alive.

Ingredients:
2-3 cups fresh tomatoes, diced (good quality & ripe)
1 large onion, diced
1-2 Jalapeno peppers, minced (take out some seeds for less heat)
3-4 cloves of fresh garlic, pressed
1 small can tomato paste (less if you prefer your salsa more liquidy)
1 can finely diced tomatoes
2 teaspoons oregano
1/2 bunch fresh cilantro to taste, finely chopped
2 teaspoons red wine vinegar
juice from ½ lime or lemon
1 small can chopped green chiles, with liquid
1/2 teaspoon chili powder
1/4 teaspoon cayenne powder (or less for less heat)
6-8 shakes hot sauce (I like Tapatio or Cholula)
1/2 teaspoon Worcestershire Sauce
salt and pepper to taste
cumin to taste (1/2 - 1 teaspoon)
Directions:
I like to use my food processor to finely chop all the ingredients. Stir completely and allow to meld for at least an hour. Taste and adjust to your taste... using a bit more sugar, salt, cumin, cayenne, etc... Serve chilled with fresh tortilla chips. Allowing it to sit overnight will bring out more complex flavors & heat!
