Creamy Tomatillo, Avocado Salsa

Bright, creamy, and just the right amount of zing.
This vibrant green salsa is what happens when tangy tomatillos meet creamy avocado — a match made in salsa heaven. It’s fresh, zesty, and comes together in minutes, making it perfect for last-minute gatherings or weekday dinners that need a little extra something.
With the bold flavor of tomatillos, a hit of lime, and the smooth richness of avocado, this salsa is equally at home next to a bowl of chips, or spooned over tacos, grilled chicken, fish, or veggies. It’s a go-to in our kitchen, especially when we want something that feels a little special but takes almost no effort.

Ingredients:
10 large tomatillos, whole (w/outside husk removed)
2 large avocados, peeled and pitted
½ -1 bunch cilantro
½ white onion, roughly chopped (save the other ½ for last minute stir in)
3-5 cloves garlic, chopped
2 limes (juiced)
½ of a serrano or jalapeño chile, roughly chopped
½ t. cumin
Salt to taste
Directions:
Boil tomatillos in a small amount of water until soft.
Drain and place in blender.
Add chopped onion, serrano, cilantro, garlic, and lime juice to blender. Blend until desired consistency is reached. If salsa is too thick, add a small amount of water or more lime juice, a little at a time, while blender is on.
Allow to cool for about 30-45 minutes (stirring occasionally)
Finally, add 1 avocado and blend until completely dissolved.
Finely chop the final avocado and pulse the blender until the desired consistency is reached.
Add salt and additional lime juice to taste.
Finally, stir in the rest of the finely chopped white onion and cilantro to your liking. This will also give your salsa a bit of fresh texture!
