Retro Cocktail ~ Eastside Rickey

Cool, crisp, and just a little bit glamorous, the Eastside Rickey tastes like a vintage cocktail party collided with a cucumber spa day — in the best possible way. Bright lime, fresh mint, botanical gin, and sparkling soda make this retro refresher dangerously easy to sip on a warm evening.

Ingredients
2 ounces gin (Hendrick’s is especially good) – vodka can easily be substituted if you don’t care for gin! I recommend citron!
1–1½ ounces fresh lime juice
½ ounces simple syrup (or to taste)
¼ cup cucumber slices
8–10 mint leaves
Club soda or sparkling water
Ice
Instructions
In a cocktail shaker, muddle:
cucumber
mint
simple syrup
Add:
gin
lime juice
ice
Shake well until icy cold.
Strain into a tall glass filled with fresh ice.
Top with club soda.
Garnish with:
cucumber ribbon or slices
mint sprig
lime wheel
