Healthy Veggie Cabbage Soup


Diet Cabbage Vegetable Soup

Ingredients:

  • olive oil

  • 1 yellow or sweet onion, chopped

  • 3 stalks celery , sliced

  • 4 cloves garlic , minced

  • 4 cups cabbage (or 1 large cabbage), cut into 1" chunks

  • 3 carrots, sliced into coins

  • 1 large red bell pepper, sliced into 1-inch strips

  • 1 ½ cups green beans, sliced into 1-inch pieces

  • 1/2 teaspoon sea salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon fresh or dried Italian spices

  • 2-3 cans chicken or vegetable broth

  • 2 cans diced tomatoes, do not drain

  • Beef bouillon to taste

Instructions:

1. Heat 2 tablespoons of olive oil into a large pot or pan, then toss in the onions and celery. Sauté until translucent.

2. Next, stir in garlic, and cook for an additional 2 minutes.

3. Next, add 2 cans of chicken or vegetable broth. (keep the 3rd an in case you want more liquid at the end)

4. Add the cans of diced (undrained) tomatoes

5. Add in the red peppers and carrots, stir.

6. Finally, add the cabbage, salt/pepper, seasoning, beef bouillon, stir

7. Cook for about 15 minutes (depending on how tender you like your cabbage… I don’t like mine too mushy).

8. Serve and enjoy!


The above is the soup recipe for weight loss, but it super tasty as well. If you just want a good veggie soup, feel free to add some root vegetables such as cubed potatoes, turnips, or parsnips!
