Frosted Molasses Ginger Cookies
Frosted Molasses Ginger Cookies

Soft, spiced, and lightly glazed, these frosted molasses ginger cookies bring cozy comfort in every bite. Simple to make and impossible to resist, they’re the perfect treat for any chilly day.


Ingredients:


Cookies:

  • 4 Tbsp salted butter, room temperature

  • ¼ cup granulated sugar (plus extra for rolling)

  • ¼ cup light brown sugar

  • 1 egg white

  • 4 Tbsp unsulfured molasses

  • 1¼ cups all-purpose flour

  • 1¼ tsp baking soda

  • 1¼ tsp ground ginger

  • ¼ tsp ground cloves

  • ¼ tsp ground allspice


Icing:

  • ¾ cup powdered sugar

  • 1–2 Tbsp heavy cream


Directions:

1. Prep the oven - Heat oven to 350°F and line a baking sheet with parchment.       

2. Make the cookie dough - Cream the butter, granulated sugar, and brown sugar until fluffy. Mix in the egg white, then the molasses.                                                               

3. Add the dry ingredients - In a separate bowl, whisk flour, baking soda, ginger, cloves, and allspice. Add to the wet mixture and stir until combined.                            

4. Shape the cookies - Place a little granulated sugar in a small bowl.Scoop small portions of dough, drop them into the sugar, roll into balls, and place on the baking sheet.                                                                                            

5. Bake - Bake 13–15 minutes, then let cool completely.                                           

6. Mix the icing - Stir together powdered sugar and heavy cream until smooth and thick.        

7. Dip & drizzle - Dip each cooled cookie into the icing and give it a little shake so the extra drips off. 


*** Let them set until the frosting dries, then enjoy!
